Soft and fluffy lemon muffins with a bright citrus flavor, perfect for breakfast or a light snack. These muffins are easy to make and deliver a refreshing balance of sweet and tangy.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Add a simple lemon glaze on top for extra sweetness and flavor.
  • Do not overmix the batter to keep muffins soft and tender.
  • Store in an airtight container at room temperature for up to 3 days.
  • Can be frozen for up to 2 months and reheated before serving.
