Juicy swordfish skewers marinated in a zesty blend of citrus, garlic, and herbs, then grilled to perfection for a light and flavorful meal.

Ingredients

  • 1 1/2 pounds swordfish, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, parsley, oregano, salt, and pepper.
  2. Add the swordfish cubes and toss to coat evenly. Cover and marinate for at least 20–30 minutes.
  3. Preheat grill or grill pan over medium-high heat.
  4. Thread the marinated swordfish onto skewers.
  5. Grill skewers for 8–10 minutes, turning occasionally, until the fish is opaque and cooked through.
  6. Remove from grill and serve immediately with additional lemon if desired.

Notes

  • If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  • Do not overcook swordfish to keep it moist and tender.
  • Serve with rice, salad, or grilled vegetables for a complete meal.
  • You can substitute swordfish with other firm fish like tuna or mahi-mahi.
