Ingredients
2 pounds carrots, peeled and cut diagonally into 2-inch pieces
3 tablespoons butter, melted
3 tablespoons pure maple syrup
1 tablespoon brown sugar
Salt, to taste
Freshly ground black pepper, to taste
Chopped fresh parsley, for garnish
Instructions
Preheat the oven to 400°F and prepare a large baking sheet.
Place the carrots on the baking sheet.
Combine the melted butter, maple syrup, and brown sugar, then pour the mixture over the carrots. Season with salt and black pepper and toss until evenly coated.
Arrange the carrots in a single layer and roast until tender and caramelized, about 25 to 30 minutes, tossing once during cooking.
