Maqluba is a traditional Middle Eastern layered rice dish with spiced chicken, roasted vegetables, and fragrant basmati rice, flipped upside down for a stunning presentation.

Ingredients

  • 1 medium firm eggplant (sliced into ½ inch rounds)
  • 2 pounds Yukon Gold potatoes (sliced into ¼ inch rounds)
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon salt (divided)
  • 1 teaspoon black pepper (divided)
  • 2 large tomatoes (sliced)
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 teaspoons 7 Spice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 large onion (sliced)
  • 2 cups basmati rice (rinsed)
  • 3 cups boiling water
  • 1 teaspoon 7 Spice
  • ½ teaspoon salt
  • Chopped parsley (for garnish)

Instructions

  1. Preheat oven to 400°F. Place eggplant slices on a paper towel-lined baking sheet, sprinkle with ½ teaspoon salt, and let sit for 30 minutes. Pat dry, transfer to parchment-lined sheet, drizzle with 1 tablespoon olive oil, season with ½ teaspoon pepper, and bake for 30 minutes, flipping halfway.
  2. Place potato slices on another parchment-lined sheet, drizzle with remaining 1 tablespoon olive oil, season with remaining salt and pepper, and bake alongside eggplant for 30 minutes, flipping halfway.
  3. In a bowl, mix chicken with 1 tablespoon olive oil, 7 spice, salt, and pepper. In a large pot, heat remaining olive oil over medium heat and cook onions until soft. Add chicken and cook 7 minutes, flip and cook another 5–7 minutes until done. Remove and set aside.
  4. Layer sliced tomatoes at the bottom of the pot. Add eggplant, then potatoes, then chicken and onions, and finally the rinsed rice. Place a plate on top to hold layers in place.
  5. Mix boiling water with 7 spice and salt. Pour over the plate into the pot until rice is covered. Cover and cook on low for 15 minutes. Remove plate and cook an additional 10 minutes.
  6. Let rest for 15 minutes, then carefully flip onto a serving platter. Garnish with chopped parsley and serve.

Notes

  • Use a nonstick or well-oiled pot to prevent sticking when flipping.
  • You can substitute chicken with lamb or keep it vegetarian by omitting meat and adding more vegetables.
  • Serve with yogurt or cucumber yogurt sauce for added freshness.
  • Letting the dish rest before flipping helps it hold its shape.
