Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 can butter beans, drained and rinsed
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon chili flakes
  • Salt and black pepper to taste
  • 1/3 cup grated Parmesan cheese

Instructions

  1. In a large bowl, combine the chickpeas, cannellini beans, butter beans, cucumber, cherry tomatoes, red onion, sun-dried tomatoes, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, chili flakes, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss until evenly coated.
  4. Stir in the grated Parmesan cheese and mix gently.
