Sweet Medjool dates are filled with creamy non-dairy yogurt and coated in a smooth matcha-infused vegan white chocolate shell. These elegant treats are refreshing, naturally sweet, and perfect for a snack or dessert.

Ingredients

  • 6 Medjool dates
  • 1/2 cup non-dairy yogurt, plus more if needed
  • 1 cup vegan white chocolate chips
  • 1 teaspoon matcha powder
  • Flaky sea salt, optional

Instructions

  1. Slice each date lengthwise and remove the pit, being careful not to cut all the way through.
  2. Fill each date with a spoonful of non-dairy yogurt.
  3. Place the stuffed dates in the freezer until firm, about 1 hour.
  4. Melt the vegan white chocolate chips in the microwave in 30-second intervals, stirring between each interval.
  5. Stir the matcha powder into the melted white chocolate until smooth and fully combined.
  6. Dip each frozen stuffed date into the matcha-white chocolate mixture, coating evenly.
  7. Place the coated dates on a parchment-lined tray or plate.
  8. Refrigerate or freeze for about 10 minutes, or until the coating is set.
  9. Sprinkle with flaky sea salt if desired and serve.
