A crisp and colorful Mediterranean chopped salad loaded with romaine, chickpeas, fresh vegetables, olives, mozzarella, and flavorful pesto dressing. It is quick to assemble and perfect for lunch, dinner, or sharing.

Ingredients

  • 1 head of romaine lettuce, finely chopped (about 9 cups)
  • 1/2 cup finely chopped red onion
  • 1 cup pitted Castelvetrano olives, sliced in half
  • 2 cups cherry tomatoes, sliced in half lengthwise
  • 1 yellow or orange bell pepper, finely chopped
  • 2 Persian cucumbers, sliced in half lengthwise and chopped
  • 6 ounces mozzarella cheese, diced
  • 1 14-ounce can chickpeas, drained and rinsed
  • 1 batch Pesto Salad Dressing

Instructions

  1. If you haven’t made the pesto salad dressing yet, prepare it first, since the rest of the salad comes together quickly.
  2. Add the finely chopped romaine lettuce to a large bowl. Top with the red onion, olives, cherry tomatoes, bell pepper, cucumbers, mozzarella, and chickpeas.
  3. Drizzle with about half of the dressing and toss until everything is evenly combined.
  4. Serve immediately with additional dressing as desired.

Notes

  • Add the dressing gradually to avoid overdressing the salad.
  • For meal prep, store the dressing separately and toss with the salad just before serving.
  • Feta cheese can be substituted for mozzarella for a saltier Mediterranean flavor.
  • Store leftover undressed salad in an airtight container in the refrigerator.
