Meringue Roulade with Summer Berries

A light and elegant meringue roulade filled with whipped cream and fresh summer berries. This delicate dessert combines a crisp exterior with a soft, creamy center and fruity flavor.

Ingredients

  • 1 tsp corn starch (cornflour)
  • 1 tsp vanilla extract
  • 1 tsp white wine vinegar
  • 4 large egg whites (preferably organic, older eggs are better for meringues)
  • ⅔ cup sugar (Baker’s sugar is best)
  • 8 oz heavy whipping cream (preferably organic)
  • ½ cup raspberries and/or blackberries (fresh)
  • ½ cup strawberries (chopped, fresh)
  • 1 Tbsp confectioner’s sugar (for dusting)

Instructions

  1. Line an 11×16 inch jelly roll tray with baking paper and preheat the oven to 325ºF (160ºC).
  2. Mix the cornstarch, vanilla extract, and white wine vinegar together in a small bowl until smooth, then set aside.
  3. Whisk the egg whites in a clean, dry bowl until stiff peaks form, then gradually whisk in the sugar and cornstarch mixture until fully combined.
  4. Spoon the meringue mixture into the prepared tray and smooth the surface with a spoon or spatula.
  5. Bake for approximately 25 minutes until golden colored.
  6. Place a towel on the counter with a sheet of baking paper on top, sprinkled with confectioner’s sugar, then turn out the meringue onto the paper.
  7. Peel away the lining paper, place a new piece of baking paper on top, and roll the meringue from the short side using the towel as an aid. Let cool.
  8. Whip the heavy whipping cream until stiff peaks form.
  9. When the meringue is cool, unroll it and remove the top paper. Spread the whipped cream evenly over the surface.
  10. Sprinkle the berries over the cream and carefully re-roll the dessert, placing the seam side down. Dust with confectioner’s sugar.
  11. Transfer the meringue roulade to a serving plate and decorate with additional berries if desired.

Notes

  • Older egg whites can help create a more stable meringue.
  • Keep the roulade chilled until serving for the best texture.
  • Fresh seasonal berries can be substituted with other soft fruits.
  • Store leftovers covered in the refrigerator and enjoy within a few days.
