Mexican Style Ground Beef is a flavorful, juicy, and versatile filling made with lean ground beef, warm spices, and green enchilada sauce. Ready in just 20 minutes, it’s perfect for tacos, burritos, nachos, enchiladas, taco salads, and more.

Ingredients

  • 1 pound lean ground beef
  • 10 ounces green enchilada sauce
  • 2 tablespoons minced dried onion
  • 1½ teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • Salt, to taste

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it into small crumbles as it cooks.
  3. Drain any excess grease from the pan.
  4. Return the beef to the skillet.
  5. Stir in the green enchilada sauce, dried onion, ground cumin, paprika, chili powder, and salt.
  6. Mix well until the beef is evenly coated.
  7. Simmer for 5 to 6 minutes, stirring occasionally, until the sauce thickens and the dried onion softens.
  8. Serve immediately in tacos, burritos, enchiladas, nachos, taco salads, rice bowls, or your favorite Mexican-inspired dishes.

Notes

  • Substitute ground turkey or ground chicken for a lighter version.
  • Use red enchilada sauce for a deeper, smokier flavor.
  • Add diced green chilies or jalapeños for extra heat.
  • Mix in black beans, pinto beans, or corn to stretch the filling.
  • Top with shredded cheddar, Monterey Jack, or Cotija cheese, plus fresh cilantro, diced onions, avocado, or pico de gallo.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 3 months and thaw overnight before reheating.
  • Reheat in a skillet with a splash of water or microwave until heated through.
