Ingredients

  • 2/3 cup italian breadcrumbs
  • 2/3 cup italian Panko breadcrumbs
  • 2 tbsp finely grated parmesan cheese
  • 1 1/2 tbsp coconut oil or butter (melted)
  • 3 eggs (beaten)
  • 1/2 cup flour
  • 24 mozzarella cheese sticks (cut half)

Instructions

  1. Combine the breadcrumbs, Panko, and parmesan cheese in a bowl.
  2. Add melted coconut oil or butter and mix with fingers until evenly absorbed; set aside.
  3. In another bowl, whisk the eggs thoroughly; set aside.
  4. Place the flour in a third bowl.
  5. Ensure cheese sticks are unwrapped and cut in half.
  6. Dip each cheese stick into the flour, then into the egg, then coat in the breadcrumb mixture. Place on a parchment-lined baking sheet.
  7. Freeze the coated cheese sticks for at least 1 hour.
  8. Preheat oven to 400°F while keeping cheese sticks frozen.
  9. Place desired amount on a parchment-lined baking sheet and bake for 5 minutes.
  10. Flip and bake for another 3-5 minutes until golden.
  11. Alternatively, air-fry at 380°F for 6-8 minutes in a single layer until golden.

Notes

  • Freezing helps prevent cheese from melting too quickly during cooking.
  • Serve with marinara sauce for dipping.
  • For extra crispiness, double coat the cheese sticks.
  • Store leftovers in the freezer and reheat directly from frozen.
