Ingredients
1 1/2 cups quick oats
1 1/2 cups rice cereal
1/3 cup brown sugar (packed)
1/3 cup honey
3 tablespoons butter
2 tablespoons mini chocolate chips
Instructions
In a large bowl, mix together the quick oats and rice cereal and set aside.
In a small saucepan over medium heat, combine brown sugar, honey, and butter. Bring to a gentle boil, then reduce heat to medium-low and simmer for 2 minutes, stirring constantly.
Remove from heat and pour the mixture over the oat and cereal blend. Stir until evenly coated, then press firmly into an 8×8-inch pan.
Immediately sprinkle mini chocolate chips on top and press them gently into the surface.
Allow to cool completely before slicing into 12 bars.
Notes
Press the mixture firmly to help the bars hold together once set.
For cleaner cuts, chill the bars before slicing.
Store in an airtight container at room temperature for up to 5 days.
