These no-bake chocolate chip granola bars are chewy, sweet, and packed with oats and crispy rice cereal for a simple homemade snack. They come together quickly on the stovetop and set into perfectly portable bars.

Ingredients

  • 1 1/2 cups quick oats
  • 1 1/2 cups rice cereal
  • 1/3 cup brown sugar (packed)
  • 1/3 cup honey
  • 3 tablespoons butter
  • 2 tablespoons mini chocolate chips

Instructions

  1. In a large bowl, mix together the quick oats and rice cereal and set aside.
  2. In a small saucepan over medium heat, combine brown sugar, honey, and butter. Bring to a gentle boil, then reduce heat to medium-low and simmer for 2 minutes, stirring constantly.
  3. Remove from heat and pour the mixture over the oat and cereal blend. Stir until evenly coated, then press firmly into an 8×8-inch pan.
  4. Immediately sprinkle mini chocolate chips on top and press them gently into the surface.
  5. Allow to cool completely before slicing into 12 bars.

Notes

  • Press the mixture firmly to help the bars hold together once set.
  • For cleaner cuts, chill the bars before slicing.
  • Store in an airtight container at room temperature for up to 5 days.
  • Wrap individually for easy grab-and-go snacks.
