Zesty, refreshing, and wholesome lemon poppy seed bites — no baking required. Perfect as a quick snack or healthy dessert, and completely vegan.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • In a large bowl, combine rolled oats, almond flour, coconut flour, poppy seeds, and salt.
  • In a smaller bowl, whisk together maple syrup, melted coconut oil, lemon juice, lemon zest, and vanilla extract.
  • Pour the wet ingredients into the dry and stir until a thick dough forms.
  • Roll into small bite-sized balls and place on a parchment-lined tray.
  • Refrigerate for at least 30 minutes until firm.
  • Store in an airtight container in the fridge for up to 1 week.

Notes

  • For extra lemony flavor, add more zest or a drop of lemon extract.
  • You can adjust sweetness by using more or less maple syrup.
  • These bites freeze well for up to 2 months.
