Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 cup heavy whipping cream
  • Pink gel food coloring (a few drops)
  • White chocolate chips or sprinkles for garnish (optional)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until evenly combined.
  2. Line a mini muffin pan with paper liners and press about 1 tablespoon of the crumb mixture firmly into the bottom of each liner to form the crust.
  3. In a large bowl, beat the softened cream cheese until smooth and creamy.
  4. Add powdered sugar, vanilla extract, and almond extract (if using). Beat until fully combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  6. Add a few drops of pink gel food coloring and mix until the desired shade is achieved.
  7. Spoon or pipe the cheesecake filling over the prepared crusts, smoothing the tops.
  8. Refrigerate for at least 2 hours, or until firm and set.
  9. Garnish with white chocolate chips or sprinkles before serving, if desired.
