3/4 Cup Unsalted Butter, softened
1 Cup Granulated Sugar
1/2 Cup Light Brown Sugar, packed
1 Teaspoon Vanilla
2 Eggs
1 3/4 Cup All-Purpose Flour
1 Teaspoon Baking Soda
1 1/2 Teaspoons Ground Cinnamon
1/2 Teaspoon Salt
2 Cups Old-Fashioned Oats
1 Medium Tart Apple, peeled and grated
1 Cup Powdered Sugar
3 Tablespoons Apple Cider
Instructions
Heat oven to 375°F. Line baking sheets with silicone baking mats or parchment paper. In a large bowl or stand mixer, beat the softened butter, granulated sugar, and brown sugar on medium speed until creamy. Beat in the vanilla and eggs, scraping down the sides of the bowl occasionally, until well blended.
In a medium bowl, mix the flour, baking soda, cinnamon, and salt. Gradually beat the flour mixture into the sugar mixture. Stir in the oats and grated apple. Shape or drop the dough into 1-inch balls and arrange them about 2 inches apart on the prepared baking sheets.
Bake for 10 minutes, or until the edges are golden brown. Cool on the baking sheet for 1 minute, then transfer the cookies to a cooling rack and allow them to cool completely.
To make the icing, whisk the powdered sugar and apple cider together in a medium bowl until smooth. Drizzle the icing over the cooled cookies and allow the glaze to set before serving.
