A simple and flavorful one-pan baked orzo dish with tomatoes, garlic, and fresh basil, perfect for an easy weeknight meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes
  • 1 cup uncooked orzo pasta
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in cherry tomatoes and cook for another 2–3 minutes until slightly softened.
  5. Add orzo, vegetable broth, oregano, salt, pepper, and red pepper flakes. Stir to combine evenly.
  6. Transfer skillet to the oven and bake uncovered for 15–20 minutes, or until orzo is tender and liquid is absorbed.
  7. Remove from oven and stir in fresh basil and parmesan cheese.
  8. Serve warm and garnish with extra basil and cheese if desired.

Notes

  • You can substitute vegetable broth with chicken broth for added flavor.
  • For a vegan version, omit parmesan or use a plant-based alternative.
  • Add cooked chicken or chickpeas for extra protein.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
