Ingredients
1 Tablespoon extra-virgin olive oil
8 oz. Italian sausage, casings removed
1 pound store-bought gnocchi
2 cups chicken stock
3 cups chopped kale
1/3 cup grated Parmesan cheese, plus more for garnishing
1 Tablespoon fresh lemon juice
Instructions
Add the olive oil to a large heavy-bottomed stock pot or Dutch oven set over medium heat. Add the sausage and cook, breaking it apart with a spatula, until fully cooked, about 5 minutes.
Using a slotted spoon, transfer the cooked sausage to a bowl and set it aside.
Add the gnocchi to the pot and cook, stirring, for 1 minute. Add the chicken stock and bring the mixture to a boil. Reduce to a simmer and cook until the gnocchi are tender, about 2 minutes.
Stir in the kale and cook until tender and wilted, about 2 minutes.
Stir in the Parmesan cheese, followed by the cooked sausage.
Remove the pot from the heat and stir in the lemon juice. Garnish with additional Parmesan cheese and serve.
Notes
Use a large heavy-bottomed stock pot or Dutch oven for even cooking.
For the best texture, avoid overcooking the gnocchi.
