Ingredients
1 tbsp olive oil
1 lb ground beef
2 tbsp taco seasoning
1/2 cup water
1/2 large onion, sliced into half moons
3 large bell peppers, cut into thin strips
1 (14.5 oz) can diced tomatoes, drained
1/4 tsp sea salt, to taste
1/4 tsp black pepper, to taste
1 cup Mexican cheese blend, shredded
1/3 cup green onions, sliced
Sour cream, optional for serving
Instructions
Heat the olive oil in a large cast iron skillet over medium-high heat. Add the ground beef and cook for 8-10 minutes, breaking it apart as it browns.
Stir in the taco seasoning and water. Cook for 2-3 minutes until the liquid is absorbed.
Reduce the heat to medium. Add the onion and bell peppers and cook for 10-15 minutes until the onions are soft and translucent.
Add the drained diced tomatoes and stir to combine. Simmer for 2-3 minutes, stirring occasionally, until excess moisture evaporates. Season with salt and black pepper to taste.
Reduce the heat to low. Sprinkle the shredded Mexican cheese blend over the skillet, cover, and cook for 1-2 minutes until the cheese is melted.
Remove from the heat, garnish with sliced green onions, and serve with sour cream if desired.
Notes
Drain the diced tomatoes well to prevent excess liquid.
Ground turkey or chicken can be substituted for ground beef.
Serve on its own or with rice, tortillas, or tortilla chips.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently on the stovetop or in the microwave.
