Ingredients

  • 4 cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp melted butter
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Lemon wedges for serving (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a shallow dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, parsley, salt, and pepper.
  • Brush both sides of the cod fillets with melted butter and olive oil.
