A warm, juicy peach blueberry cobbler topped with a buttery, golden biscuit-style crumble. This easy fruit dessert is delicious served warm.

Ingredients

  • 3 cups sliced peaches
  • 1 1/2 cups blueberries
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cubed and cold)
  • 1/2 cup cold milk (2% or higher)

Instructions

  1. Preheat the oven to 350°F.
  2. Add the sliced peaches and blueberries to an 11×7-inch (2-quart) baking dish. Sprinkle with 1/4 cup granulated sugar, cornstarch, and vanilla extract, then stir until the fruit is evenly coated. Set aside.
  3. To make the cobbler topping, add the flour, remaining 1/2 cup granulated sugar, baking powder, and salt to a large mixing bowl. Whisk until well combined.
  4. Add the cold cubed butter to the flour mixture. Use a fork or pastry blender to work the butter into the flour until small chunks of butter remain throughout the mixture. Pour in the cold milk and mix just until combined.
  5. Use your fingers to crumble chunks of the cobbler topping evenly over the fruit filling.
  6. Bake for 40 minutes, or until the topping is golden brown and cooked through. Serve warm, allowing the cobbler to cool slightly as the filling will continue to thicken as it cools.

  • Keep the butter and milk cold for the best cobbler topping texture.
