A warm, comforting peach crisp with juicy spiced peaches and a buttery oat topping, perfect served with vanilla ice cream.

Ingredients

  • 10 cups peaches (sliced, about 10 peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1/2 teaspoon cinnamon
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar (packed)
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (diced)
  • Vanilla ice cream (for serving, optional)

Instructions

  1. Preheat oven to 375°F and grease a 9-inch square or 8×11-inch baking dish.
  2. Place the sliced peaches in the prepared dish. Add granulated sugar, cornstarch, lemon juice, and cinnamon. Stir to combine and spread evenly.
  3. In a bowl, mix oats, flour, brown sugar, and salt. Cut in the diced butter using a fork or hands until the mixture forms coarse crumbs.
  4. Sprinkle the topping evenly over the peach mixture.
  5. Bake for 35–40 minutes, until the topping is golden brown and the filling is bubbling.
  6. Let cool slightly before serving. Serve warm with vanilla ice cream if desired.

Notes

  • Fresh or frozen peaches can be used; thaw and drain frozen peaches first.
  • Add a pinch of nutmeg or ginger for extra spice.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • Reheat in the oven to maintain a crisp topping.
