Ingredients

  • For the crust and topping:
  • 1 ½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ¾ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ cup unsalted butter, cold and cubed
  • 1 tsp vanilla extract
  • For the peach filling:
  • 45 ripe peaches, peeled and sliced
  • ⅓ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line with parchment paper.
  • Make the crumble topping: In a large bowl, combine flour, oats, brown sugar, baking powder, salt, and cinnamon. Add in the cold, cubed butter and use a pastry cutter or your fingers to blend until the mixture becomes crumbly. Stir in the vanilla extract. Set aside 1 cup of the mixture for the topping.
  • Prepare the peach filling: In a medium bowl, combine the sliced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon. Toss until the peaches are evenly coated.
  • Assemble the bars: Press the remaining crumble mixture into the prepared baking dish to form an even crust. Spoon the peach filling on top of the crust, spreading it out evenly. Sprinkle the reserved crumble mixture over the peaches.
  • Bake for 40-45 minutes or until the topping is golden brown and the filling is bubbly.
  • Allow the bars to cool in the pan before cutting into squares. Serve and enjoy!
