Ingredients
1 cup granulated sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 teaspoon vanilla extract
6 cups corn flakes
Instructions
In a large saucepan, combine the granulated sugar, light corn syrup, and creamy peanut butter. Cook over medium-high heat, stirring constantly, until the mixture begins to boil in the center. Be careful not to let the sugar burn.
As soon as the mixture comes to a boil, immediately remove the saucepan from the heat. Stir in the vanilla extract, then add the corn flakes. Gently mix until all the corn flakes are evenly coated with the peanut butter mixture.
Working quickly before the mixture begins to cool and harden, use an ice cream scoop or large spoon to drop portions onto a baking sheet lined with parchment paper. Shape into cookies if needed.
Allow the cookies to cool and set on the parchment paper for 20 to 30 minutes at room temperature. Once firm, serve and enjoy.
Notes
Work quickly when scooping the cookies because the peanut butter mixture begins to firm up as it cools.
Stir the sugar mixture constantly while heating to prevent burning and ensure a smooth consistency.
Use fresh, crispy corn flakes for the best crunchy texture.
For evenly sized cookies, use a medium ice cream scoop or cookie scoop.
Do not overcook the sugar mixture. Remove it from the heat as soon as it starts boiling to prevent overly hard cookies.
Store cooled cookies in an airtight container at room temperature for up to 5 days, separating layers with parchment paper to prevent sticking.
For a fun variation, drizzle the cooled cookies with melted chocolate or sprinkle with a pinch of flaky sea salt.
For a gluten-free version, use certified gluten-free corn flakes and verify that all other ingredients are gluten-free.
