This Pear & Gorgonzola Salad combines crisp greens, juicy pears, creamy blue cheese, toasted walnuts, and sweet dried cranberries, all tossed in a tangy honey-Dijon vinaigrette. A fresh, elegant salad that’s perfect as a light lunch, appetizer, or holiday side dish.

Ingredients

  • 3 tablespoons olive oil
  • 1 1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon honey or agave
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon oregano
  • Salt and pepper to taste
  • Squeeze of lemon juice
  • 3 cups wild lettuce mix or arugula
  • 1 pear (diced)
  • 3 tablespoons crumbled gorgonzola or blue cheese
  • 2 tablespoons chopped walnuts (lightly toasted)
  • 2 tablespoons dried cranberries (roughly chopped)

Instructions

  1. Heat a small frying pan over medium heat. Add the chopped walnuts with a small amount of oil and toast for about 3 minutes, stirring frequently until lightly golden and fragrant. Remove from the heat and set aside to cool.
  2. Prepare the dressing by combining the olive oil, apple cider vinegar, honey or agave, Dijon mustard, and oregano in a small mixing bowl. Whisk until smooth and well combined. Add a squeeze of lemon juice, if desired, and season with salt and pepper to taste.
  3. Place the wild lettuce mix or arugula in a large salad bowl. Add the diced pear, crumbled gorgonzola or blue cheese, toasted walnuts, and chopped dried cranberries.
  4. Drizzle half of the prepared dressing over the salad. Toss gently to coat the ingredients evenly without crushing the pears or greens.
  5. Taste and add more dressing a little at a time until the desired balance is reached. Serve immediately while the greens are fresh and crisp.

Notes

  • Pear varieties: Bartlett, Anjou, or Bosc pears work beautifully in this salad. Choose ripe but firm pears for the best texture.
  • Cheese substitutions: Replace gorgonzola with another blue cheese, goat cheese, or feta for a different flavor.
  • Nut substitutions: Pecans, almonds, or pumpkin seeds can replace walnuts. Toast them lightly to enhance their flavor.
  • Sweetener options: Use honey or agave according to your preference. For a slightly different flavor, try maple syrup.
  • Prevent browning: Toss the diced pear with a little lemon juice if preparing it ahead of time.
  • Make ahead: Prepare the dressing and toast the walnuts up to 2 days in advance. Store the dressing in the refrigerator and the cooled walnuts in an airtight container.
  • Storage: This salad is best enjoyed immediately after dressing. Store undressed salad components separately in the refrigerator for up to 1 day.
  • Serving suggestions: Serve alongside roasted vegetables, grilled chicken, or crusty bread for a more substantial meal.
  • For a vegetarian version, use a blue cheese made with microbial or vegetarian rennet.
