Ingredients
2 cups all purpose flour (good quality, unbleached, unbromated, non GMO)
2 tsp. baking powder
½ tsp baking soda
1 pinch salt (sea salt)
½ cup sugar
2 eggs
½ cup light olive oil
1 cup yogurt (if using Greek yogurt, add 1 Tbsp milk or buttermilk)
2 pears (medium-ripe)
1 tsp Demerara or Swedish pearl sugar to top (optional – if desired)
Instructions
Preheat the oven to 350°F (175°C).
Wash, peel, core, and cut the pears into chunks. Set aside.
Sift the flour, baking powder, baking soda, and salt into a large bowl.
Stir the sugar into the dry ingredients.
In a separate bowl, whisk together the eggs, olive oil, and yogurt until smooth.
Pour the wet mixture into the dry ingredients.
Gently stir until just combined. Do not overmix, as this will make the muffins dense.
Fold in the pear pieces with just a few gentle turns. Divide the batter evenly among 12 muffin cups. Sprinkle with Demerara or Swedish pearl sugar if desired.
Bake for 18 to 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Notes
Use medium-ripe pears for the best flavor and texture.
If using Greek yogurt, add 1 tablespoon of milk or buttermilk to thin it slightly.
Do not overmix the batter to keep the muffins light and tender.
Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
