This thick and creamy acai bowl is packed with frozen fruit, peanut butter, and antioxidant-rich acai. Ready in minutes, it’s a refreshing and nutritious breakfast or snack topped with your favorite ingredients.

Ingredients

  • 2 unsweetened acai packets
  • 1 frozen banana, in chunks
  • 1/4 cup non-dairy milk (if needed)
  • 1/2 cup frozen mixed berries
  • 1 tablespoon peanut butter (or nut butter of choice)
  • Toppings of choice: nut butter drizzle, granola, berries, banana slices, chia seeds, etc.

Instructions

  1. Let the frozen acai packets sit at room temperature for a few minutes until the packaging loosens. Remove from the packages and break into pieces.
  2. Add the acai pieces, frozen banana chunks, frozen mixed berries, and peanut butter to a blender.
  3. Blend on low speed, gradually increasing as the ingredients begin to combine. Use a tamper if available to help move the frozen ingredients.
  4. Add non-dairy milk 1 tablespoon at a time as needed to achieve a thick, spoonable consistency.
  5. Blend until smooth and creamy.
  6. Scoop the mixture into a bowl and top with granola, banana slices, fresh berries, chia seeds, and an extra drizzle of nut butter if desired.

Notes

  • Use as little liquid as possible to keep the bowl thick.
  • Any non-dairy milk works well, including almond, oat, or coconut milk.
  • Swap peanut butter for almond, cashew, or sunflower seed butter.
  • Serve immediately for the best texture.
  • Add protein powder for a higher-protein breakfast option.
