These pistachio stuffed dates are filled with creamy pistachio butter and coated in rich vegan chocolate for an easy, naturally sweet treat. Perfect for snacking, dessert, or sharing with guests.

Ingredients

  • 6 medjool dates
  • 6 teaspoons pistachio butter
  • 1/2 cup vegan chocolate chips
  • Chopped pistachios, optional for garnish

Instructions

  1. If the dates contain pits, make a shallow slice down the center of each date and remove the pit.
  2. Fill each date with 1 teaspoon of pistachio butter. Add chopped pistachios inside if desired.
  3. Place the stuffed dates in the freezer for about 1 hour or until the filling is firm.
  4. Melt the vegan chocolate chips in the microwave, stirring every 30 seconds until smooth.
  5. Dip each stuffed date into the melted chocolate until fully coated.
  6. Sprinkle with chopped pistachios if desired and chill until the chocolate has set.
  7. Serve and enjoy.
