Crispy potato fritters made with shredded potatoes, egg, and cheese, pan-fried until golden and delicious. These savory fritters make a great side dish, appetizer, or snack.

Ingredients

  • 1 kg (2.2 lb) potatoes (Russet potatoes or any type of starchy potatoes)
  • 1 egg
  • 1 tbsp all purpose flour
  • 1 ½ tbsp olive oil
  • Salt and pepper to taste
  • Seasonings of choice (optional: garlic powder, onion powder, Italian seasoning, etc.)
  • 3 tbsp Parmesan cheese or shredded mozzarella

Instructions

  1. Wash and peel the potatoes. Place them in a large pot, cover with cold water, and bring to a boil. Cook for about 6 minutes, then drain and allow them to cool.
  2. Using a box grater or a food processor with a grating attachment, shred the potatoes.
  3. In a large bowl, combine the shredded potatoes, egg, flour, olive oil, salt, pepper, Parmesan cheese, and any desired seasonings. Mix until well combined.
  4. Take a small handful of the potato mixture and shape it into a flat disc. Repeat with the remaining mixture.
  5. Heat a lightly greased nonstick skillet over medium heat. Place the fritters in the pan without overcrowding.
  6. Cook until the underside becomes golden brown, then flip with a spatula and cook the other side until crisp and cooked through.
  7. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  8. Serve warm as a side dish, appetizer, or snack.

Notes

  • Russet or other starchy potatoes work best for crisp fritters.
  • Do not overcrowd the pan to ensure even browning.
  • You can substitute mozzarella for Parmesan for a milder flavor.
  • Add herbs like parsley or chives for extra flavor.
  • Serve with sour cream, yogurt dip, or your favorite sauce.
