Graham cracker crumbs

Instructions
Preheat the oven and prepare a baking pan with parchment paper or foil.
Combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.
Bake the crust briefly, then remove it from the oven and allow it to cool slightly.
Beat the softened cream cheese and sugar until smooth and creamy.
Add the eggs and vanilla, mixing until just combined.
Reserve a portion of the plain cheesecake mixture for the swirl.
Add the pumpkin puree and warm spices to the remaining cheesecake mixture and mix until smooth.
Spread the pumpkin cheesecake filling evenly over the crust. Spoon the reserved plain cheesecake mixture over the top and gently swirl it into the pumpkin layer.
Bake until the edges are set and the center still has a slight jiggle.
Cool completely, then refrigerate until thoroughly chilled and firm before slicing into bars.
Serve chilled, optionally topped with whipped cream and a sprinkle of cinnamon.
Notes
Use pure pumpkin puree, not pumpkin pie filling.
For the smoothest filling, bring the cream cheese and eggs to room temperature before mixing.
Avoid overmixing after adding the eggs to help prevent cracks.
Chill the cheesecake thoroughly before cutting for clean slices.
