Tender shredded chicken simmered in a tangy barbecue sauce for a quick and flavorful meal. Perfect for sandwiches, wraps, bowls, or serving with your favorite sides.

Ingredients

  • 1 cup barbecue sauce
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • to 2 pounds boneless skinless chicken breasts (about 4 small or 2 large)
  • Salt and pepper
  • 3 tablespoons (42g) butter (salted or unsalted is fine)

Instructions

  1. In a medium bowl, whisk together the barbecue sauce, apple cider vinegar, and water. Set aside.
  2. Pat the chicken breasts dry and lightly season both sides with salt and pepper. Heat a large skillet with a lid over medium-high heat and melt the butter.
  3. Add the chicken breasts and cook until lightly browned. Flip the chicken, then pour the barbecue sauce mixture over the top.
  4. Bring the sauce to a simmer, then reduce the heat to medium-low to maintain a gentle simmer. Cover and cook for 5 minutes. Flip the chicken, cover again, and cook for another 3 to 6 minutes, or until an instant-read thermometer inserted into the thickest part reaches 165°F.
  5. Transfer the chicken to a cutting board and let it rest for 5 to 10 minutes. Meanwhile, continue simmering the sauce uncovered, stirring occasionally, until thickened.
  6. Shred the chicken and return it to the skillet. Stir until thoroughly coated with the barbecue sauce, then serve.
