Ingredients

  • 1/2 pound small-shaped pasta
  • 1 cup grape or cherry tomatoes, or 1/2 bell pepper
  • 1 bunch rainbow carrots or 2 large carrots
  • 2 small cucumbers or 1/2 large English cucumber
  • 1 lemon, halved
  • 1 teaspoon honey (optional)
  • 1/4 cup olive oil
  • 2 tablespoons grated Parmesan cheese, plus extra for serving (optional)
  • Coarse salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook the pasta according to the package directions until al dente. Drain and allow it to cool slightly.
  2. Chop the tomatoes and cucumbers into bite-sized pieces. Peel and grate the carrots.
  3. Place the cooked pasta and prepared vegetables into a large mixing bowl.
  4. In a small bowl or mason jar, combine 3 tablespoons fresh lemon juice, honey (if using), olive oil, Parmesan cheese, and a generous pinch of salt. Whisk or shake until smooth.
  5. Pour the dressing over the pasta and vegetables.
  6. Toss everything together until evenly coated.
  7. Taste and season with additional salt and freshly ground black pepper as needed.
  8. Sprinkle with extra Parmesan cheese if desired and serve immediately, or refrigerate until ready to enjoy.
