These Raspberry Cream Cheese Bites are a delightful combination of creamy cheese and tangy raspberry filling, nestled in a soft, buttery pastry crust. Perfect for a bite-sized treat at parties or a sweet snack, these bites are quick to make and bursting with fresh flavors.

Ingredients

  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 package (8 oz) crescent roll dough
  • 1/2 cup fresh raspberries (or raspberry jam)
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prepare the filling: In a medium bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Prepare the dough: Unroll the crescent roll dough onto a parchment-lined baking sheet. Separate the dough into triangles.
  • Assemble the bites: Spread a small amount of cream cheese mixture onto each dough triangle. Top with a few fresh raspberries or a teaspoon of raspberry jam.
  • Shape the bites: Carefully roll up each crescent triangle starting from the wide end, forming a bite-sized crescent shape. Pinch the edges to seal.
  • Apply egg wash: In a small bowl, whisk the egg with a teaspoon of water. Brush the top of each bite with the egg wash and sprinkle with coarse sugar, if desired.
  • Bake: Place the bites in the oven and bake for 12-15 minutes or until golden brown and puffed.
  • Cool and serve: Let the bites cool slightly before serving.

Notes

  • You can substitute fresh raspberries with raspberry jam for an easier option.
  • If using frozen raspberries, ensure they are well-drained to prevent sogginess in the bites.
  • You can add a drizzle of chocolate or more powdered sugar on top for extra sweetness.
