Roasted Red Pepper Soup

A creamy roasted red pepper soup with fennel, roasted garlic, fresh basil, and a bright touch of lemon. Rich, savory, and gently spiced for a comforting meal.

Ingredients

  • 5 red peppers, quartered
  • 1 fennel, sliced
  • 1 garlic, head
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp crushed red pepper
  • 2 cup vegetable stock
  • 1/4 cup heavy cream
  • 2 tbsp parsley, chopped
  • 1 parmesan rind
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 handful fresh basil

Instructions

  1. Preheat the oven to 425°F. Place the red peppers and fennel on a baking tray. Drizzle with 2 tbsp olive oil and season with 1 tsp kosher salt, 1 tsp black pepper, and 1/2 tsp crushed red pepper. Toss to combine.
  2. Slice about 1/4 inch off the top of the garlic head, just enough to expose the tops of the cloves. Place the garlic cut-side up on a small sheet of aluminum foil. Drizzle with the remaining 1 tbsp olive oil, letting it seep between the cloves. Wrap the foil loosely around the garlic to create a seal.
  3. Place the wrapped garlic on the baking tray with the vegetables and roast for 45 minutes.
  4. Transfer the roasted red peppers and fennel to a Dutch oven. Squeeze the roasted garlic cloves from their skins into the pot. Add the vegetable stock, fresh basil, and parmesan rind.
  5. Remove the parmesan rind after it has flavored the soup, then use an immersion blender to blend the soup until completely smooth.
  6. Bring the soup to a simmer, add the remaining 1/2 tsp kosher salt, and simmer for 15 minutes.
  7. Remove the pot from the heat and stir in the lemon juice and heavy cream. Garnish with chopped parsley and serve hot.

Notes

  • For an extra-smooth soup, blend thoroughly with an immersion blender or carefully use a countertop blender in batches.
  • The parmesan rind adds savory depth and should be removed before blending.
  • Adjust the crushed red pepper to taste for a milder or spicier soup.
  • Store leftovers in an airtight container in the refrigerator and reheat gently before serving.
