Golden, caramelized roasted sunchokes with tender centers, olive oil, and fresh thyme. This easy vegetable side dish is ready in just 25 minutes.

Ingredients

  • 1 lb sunchokes (Jerusalem artichokes), rinsed, scrubbed well, and cut into 1/2-inch thick slices
  • 1 1/2 tablespoons extra virgin olive oil, plus more for drizzling
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1–2 sprigs fresh thyme, finely chopped

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius) with a rack in the center position.
  2. In a medium bowl, toss the sliced sunchokes with olive oil, kosher salt, and freshly ground black pepper until evenly coated.
  3. Arrange the sunchokes cut-side down in a single layer on a half sheet pan. Leave space between the slices to encourage even caramelization.
  4. Roast for 18-22 minutes, flipping the pieces halfway through, until lightly caramelized and fork-tender.
  5. Remove from the oven and gently toss with freshly chopped thyme and an additional sprinkle of kosher salt, if desired.
  6. Drizzle with extra virgin olive oil if desired and serve immediately.

Notes

  • Sunchokes contain inulin, a type of fiber that may cause digestive discomfort or bloating, especially when eaten in large quantities. Removing most of the peel before roasting is optional, but does not eliminate the inulin.
  • Scrub the sunchokes thoroughly before slicing. Their thin skins are edible, so peeling is optional.
  • Cut the sunchokes into evenly sized slices for consistent roasting.
  • Avoid overcrowding the baking sheet to help the sunchokes caramelize instead of steam.
  • Fresh rosemary or parsley can be substituted for thyme.
  • Add a squeeze of fresh lemon juice before serving for extra brightness.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or air fryer until heated through.
