Ingredients
1 lb tortellini
1.25 lb sweet Italian sausage, ground
2 medium carrots, chopped
2 celery stalks, chopped
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp fennel seed
2 tbsp tomato paste
1 28 oz can crushed tomatoes
8 cups chicken stock
2 tsp kosher salt
1 tsp black pepper
1 14 oz can cannellini beans
1–3 tbsp olive oil
2 tbsp fresh chopped parsley
2/3 cup heavy cream
Instructions
Remove the sweet Italian sausage from the refrigerator 30 minutes before cooking. Heat a large Dutch oven over medium-high heat and add 1 tbsp olive oil. Add the ground sausage and let it sear untouched for 3 minutes. Break it up with a wooden spoon and continue cooking until browned. Remove with a slotted spoon and set aside.
Remove the excess oil from the pot. Add 2 tbsp olive oil and reduce the heat to medium. Add the carrots, onion, and celery and sauté until softened, about 8 minutes. Season with 1/2 tsp salt and 1 tsp black pepper. Stir in the garlic and fennel seed.
Create a small well in the center of the vegetables and add the tomato paste. Let it caramelize for 2 minutes, then stir it into the vegetables.
Add the crushed tomatoes and bring to a simmer. Season with 1 tsp salt, then add the chicken stock and return to a simmer. Add the browned sausage, cannellini beans, and parsley. Simmer for 20 minutes.
Add the tortellini and remaining 1/2 tsp salt. Simmer for 10-15 minutes, or until the tortellini is al dente.
Remove the soup from the heat and stir in the heavy cream. Serve hot.
Notes
Sprinkle grated Parmesan over each serving if desired.
For the best browning, allow the sausage to sear undisturbed for the first 3 minutes.
Cook the tortellini just until al dente to prevent it from becoming too soft.
Store leftovers covered in the refrigerator and reheat gently, adding a splash of stock if the soup has thickened.
