1 teaspoon ground cinnamon

1 cup packed light brown sugar

Instructions
Peel, core, and finely chop the apples. Pat them dry to remove excess moisture.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Whisk together the flour, baking soda, cinnamon, and kosher salt in a medium bowl.
Beat the softened butter, brown sugar, and granulated sugar until light and creamy. Beat in the egg and vanilla until smooth.
Gradually mix the dry ingredients into the butter mixture just until a dough forms. Fold in the prepared apples and caramel pieces.
Portion the dough onto the prepared baking sheets, leaving space between each cookie.
