This Salted Honey Custard Pie features a rich, silky honey custard filling baked in a buttery, flaky pie crust. Sweetened with golden honey and finished with a delicate sprinkle of sea salt, it’s an irresistible balance of sweet and salty flavors.

Ingredients

  • 1 prepared, unbaked pie crust
  • 1/2 cup (1 stick) butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 3/4 cup Bee Harmony Honey
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 teaspoons apple cider vinegar
  • Flaky sea salt, for topping (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Press the prepared pie crust into a deep-dish pie dish, gently fitting it along the bottom and sides.
  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, cornstarch, salt, vanilla extract, honey, eggs, heavy cream, and apple cider vinegar until smooth and thoroughly combined.
  3. Pour the honey custard filling into the prepared pie crust, spreading it evenly.
  4. Place the pie in the preheated oven and bake for 50–55 minutes, or until the top is golden brown and the custard is mostly set with a slight jiggle in the center.
  5. Remove the pie from the oven and allow it to cool at room temperature for 3–4 hours, until completely cooled. Refrigerate until ready to serve.
  6. For an optional finishing touch, sprinkle flaky sea salt over the top just before slicing and serving.

Notes

  • Honey: Bee Harmony Honey provides a rich floral sweetness, but any good-quality pure honey can be substituted.
  • Pie crust: Use a homemade or store-bought deep-dish pie crust. Keep the crust chilled before adding the filling for a flakier texture.
  • Prevent overbrowning: If the crust edges brown too quickly, loosely cover them with aluminum foil or a pie shield.
  • Custard texture: The center should have a slight wobble when removed from the oven. The filling will continue setting as it cools.
  • Sea salt: A light sprinkle of flaky sea salt enhances the honey flavor and balances the sweetness.
  • Cooling: Allow the pie to cool completely before refrigerating to help the custard set properly. Refrigerate promptly once cooled.
  • Storage: Store covered in the refrigerator for up to 4 days.
  • Serving suggestion: Serve chilled or slightly cool, optionally topped with whipped cream or fresh berries.
