Sausage and Lentil Soup

A hearty sausage and lentil soup loaded with tender vegetables, mushrooms, spinach, and savory Italian herbs. A splash of fresh lemon juice brightens the rich, comforting broth.

Ingredients

  • 2 lbs sweet Italian sausage
  • 2 leeks, chopped
  • 2 celery stalks, chopped
  • 2 medium carrots, chopped
  • 5 oz baby bella mushrooms
  • 10 cups chicken broth
  • 1/4 cup tomato paste
  • 1 red pepper, chopped
  • 1 cup lentils
  • 4 oz bag of spinach
  • 1/2 lemon, juiced
  • 2 bay leaves
  • 1 tsp salt
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/2 tsp crushed red pepper
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Place a Dutch oven on the stovetop over medium-high heat. Add the sausage and sear untouched for 2-3 minutes. Break apart the sausage and continue cooking until browned, about 5 minutes. Use a slotted spoon to remove the sausage and set it aside.
  2. Lower the heat to medium and add the olive oil to the pot. Stir in the celery and leeks and saute for 5 minutes, or until softened. Stir in the oregano, parsley, black pepper, and crushed red pepper.
  3. Stir in the mushrooms, carrots, and red pepper. Saute for another 5 minutes, until the mushrooms begin to brown. Add the tomato paste and stir it into the vegetables. Let the mixture cook undisturbed for 3 minutes to caramelize the tomato paste.
  4. Pour the chicken broth into the pot and add the bay leaves and salt. Bring to a boil, then lower the heat to a simmer. Return the sausage to the soup and simmer for 15 minutes.
  5. Stir in the lentils and continue simmering for 25 minutes, or until the lentils are tender.
  6. Add the spinach, cover the pot, and cook for 3 minutes. Remove the cover, stir in the lemon juice, remove the bay leaves, and serve.

Notes

  • For a milder soup, reduce or omit the crushed red pepper.
  • Simmer until the lentils are tender, adding a little extra broth if the soup becomes thicker than desired.
  • Store leftovers in an airtight container in the refrigerator and reheat gently before serving.
