Simple Chai is a warm and comforting spiced tea made with black tea, milk, ginger, cinnamon, cardamom, and anise. Ready in just 10 minutes, it delivers cozy café-style flavor with simple pantry ingredients.

Ingredients

  • 1 cup water
  • 1 cup milk
  • 1 cinnamon stick, broken in half
  • 2 anise stars
  • 4 cardamom pods, crushed
  • 1-inch knob peeled ginger
  • 2 teaspoons white sugar
  • 2 black tea bags

Instructions

  1. Place the water, milk, cinnamon stick, anise stars, crushed cardamom pods, and peeled ginger into a small saucepan.
  2. Heat over medium-low heat and bring the mixture to a gentle simmer. Simmer for 2 to 3 minutes without boiling.
  3. Add the sugar and tea bags.
  4. Continue simmering for another 2 to 3 minutes to allow the tea and spices to infuse.
  5. Remove from heat and strain into mugs.
  6. Discard the whole spices and tea bags.
  7. Top with cold foam if desired and serve warm.

Notes

  • Use oat milk, almond milk, or coconut milk for a dairy-free version.
  • Replace white sugar with honey, maple syrup, or brown sugar.
  • Add whole cloves for extra spice.
  • Increase the ginger for a stronger flavor.
  • Loose-leaf black tea may be substituted for tea bags.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or microwave without boiling.
  • Serve over ice for an iced chai variation.
