This single-serve healthy apple crisp features tender cinnamon-spiced apples topped with a crunchy oat, walnut, and almond flour crumble. It’s a cozy dessert that’s naturally dairy-free and perfectly portioned for one.

Ingredients

  • 1 apple (Honeycrisp recommended)
  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 4 tablespoons rolled oats
  • 3 tablespoons almond flour
  • 2 tablespoons chopped walnuts (or other nuts of choice)
  • 2 tablespoons maple syrup
  • 1/2 tablespoon softened vegan butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • Pinch salt

Instructions

  1. Preheat the oven to 350°F.
  2. Peel the apple if desired and thinly slice it. Place the slices in a small ramekin and toss with 1/2 tablespoon maple syrup and 1/2 teaspoon cinnamon.
  3. In a small bowl, combine the rolled oats, almond flour, chopped walnuts, vegan butter, 2 tablespoons maple syrup, vanilla extract, 1/2 teaspoon cinnamon, nutmeg, and salt. Mix until crumbly.
  4. Sprinkle the topping evenly over the apple slices.
  5. Cover the ramekin with foil and bake for 15 minutes.
  6. Remove the foil and continue baking for 20 minutes, or until the apples are tender and the topping is golden and crisp.
  7. Serve warm as desired.

Notes

  • Serve with dairy-free vanilla ice cream, yogurt, or a drizzle of peanut butter.
  • Pecans or almonds can be substituted for walnuts.
  • For extra sweetness, add an additional drizzle of maple syrup before serving.
