Ingredients

  • 1 recipe steak marinade
  • 1 tbsp unsalted butter
  • 4 (8-oz) sirloin steaks

Instructions

  1. Prepare the steak marinade according to its instructions. Marinate the steaks for at least 3 hours and up to 24 hours. Alternatively, season generously with salt and pepper if skipping the marinade.
  2. Remove the steaks from the refrigerator 30 minutes before cooking and pat them dry with paper towels.
  3. Preheat the oven to 400°F (204°C). Heat a cast iron skillet over medium-high heat for about 3 minutes.
  4. Add the butter to the skillet and let it melt. Place the steaks in a single layer and sear for about 2 minutes without moving them. Flip and sear for 1–2 minutes on the other side.
  5. Transfer the skillet to the oven and bake for 2–6 minutes depending on your preferred doneness. For 1.5-inch steaks: 2 minutes for rare, 3 minutes for medium-rare, 4 minutes for medium, 5 minutes for medium-well, and 6 minutes for well done. Use a meat thermometer to verify the internal temperature.
  6. Transfer the steaks to a plate immediately after cooking and let them rest for 5 minutes before serving.

Notes

  • Do not marinate longer than 24 hours.
  • Allowing the steaks to come to room temperature helps them cook more evenly.
  • The internal temperature will rise about 5°F while the steaks rest.
  • Serve with roasted vegetables, potatoes, or a fresh salad.
  • Leftover steak can be refrigerated in an airtight container for up to 3 days.
