Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup low-sodium chicken broth
  • 1 cup creamy Caesar dressing, plus more for serving if desired
  • 3/4 cup grated Parmesan cheese
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh parsley
  • 6 hamburger buns or 12 slider buns, toasted
  • 2 cups shredded romaine lettuce

Instructions

  1. Place the chicken and chicken broth in a 4- to 6-quart slow cooker.
  2. Cover and cook on Low for 3 to 4 hours for chicken breasts or 4 to 5 hours for chicken thighs. Alternatively, cook on High for 1 1/2 to 2 hours for breasts or 2 to 2 1/2 hours for thighs.
  3. Transfer the cooked chicken to a cutting board and shred using two forks. Discard the cooking liquid from the slow cooker.
  4. Return the shredded chicken to the slow cooker and add the Caesar dressing, Parmesan cheese, and black pepper. Stir until well combined.
  5. Cover and cook on High for 20 minutes, or until heated through.
  6. Stir in the chopped parsley.
  7. Divide the chicken mixture among the toasted buns and top with shredded romaine lettuce.
  8. Drizzle with additional Caesar dressing if desired and serve immediately.
