This Slow Cooker Garlic Parmesan Chicken and Potatoes is a perfect one-pot meal for busy nights. Tender, juicy chicken and creamy potatoes are infused with rich garlic and Parmesan flavors. The slow cooker does all the work, making this dish a hassle-free, flavorful option for your family dinner!

Ingredients

  • 4 bone-in, skinless chicken thighs (or breasts)
  • 1 1/2 lbs baby potatoes, halved
  • 1/4 cup unsalted butter, melted
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the slow cooker: Lightly grease the bottom of the slow cooker with cooking spray or a small amount of butter.
  • Season the chicken and potatoes: In a small bowl, mix together the melted butter, Parmesan cheese, minced garlic, oregano, thyme, rosemary, salt, and black pepper. Coat the chicken thighs and potatoes in the mixture, ensuring everything is well covered.
  • Add to the slow cooker: Place the seasoned chicken thighs in the slow cooker, and arrange the halved baby potatoes around the chicken. Pour the chicken broth over the top.
  • Cook on low: Cover and cook on low for 6–7 hours or until the chicken is cooked through and the potatoes are tender.
  • Garnish and serve: Once cooked, garnish with chopped fresh parsley before serving.

Notes

  • You can swap chicken thighs for chicken breasts if you prefer, but thighs tend to stay juicier.
  • For a crispier texture, you can briefly broil the chicken under high heat for 2-3 minutes after cooking.
