Smashed Meatball Sub Tacos are a creative and delicious mash-up of Italian meatball subs and taco night. Juicy smashed meatballs are cooked until crisp, topped with marinara and melty mozzarella, and wrapped in toasted tortillas for a fun, handheld meal.

Ingredients

  • 1 pound ground beef
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup plain breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 small flour tortillas
  • 1 cup marinara sauce, warmed
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. In a mixing bowl, combine ground beef, Parmesan, breadcrumbs, garlic, Italian seasoning, salt, and pepper. Mix until just combined and form into 6 equal meatballs.
  2. Heat a large skillet over medium heat. Place meatballs in the skillet and cook for 1–2 minutes until bottom is browned.
  3. Flip each meatball and place a tortilla over it. Use a spatula to firmly press down and smash the meatball flat into the tortilla.
  4. Continue cooking for 2–3 minutes until the beef is cooked through and tortilla is golden brown underneath. Flip and cook for 1 minute more.
  5. Top each smashed meatball with a spoonful of marinara and a sprinkle of mozzarella. Cover the skillet briefly to melt the cheese.
  6. Garnish with fresh basil or parsley, if desired, and serve immediately.

Notes

  • Use store-bought or homemade marinara sauce.
  • Swap beef for ground turkey or chicken for a leaner version.
  • Toast the tortillas ahead of time for extra crispiness.
  • Serve with a side salad or roasted veggies for a full meal.
