Flavorful Mediterranean chicken bowls featuring warmly spiced chicken served with fresh vegetables and grains for a balanced, vibrant meal.

Ingredients

  • 1 lb boneless skinless chicken breast
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, sliced
  • 1/4 cup feta cheese
  • 1/4 cup hummus
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a bowl, mix olive oil, paprika, cumin, turmeric, garlic powder, salt, and pepper.
  2. Rub the spice mixture evenly over the chicken.
  3. Cook chicken in a skillet over medium heat for 5–7 minutes per side until fully cooked.
  4. Remove from heat and let rest, then slice into strips.
  5. Prepare bowls by adding cooked rice or quinoa as the base.
  6. Top with chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  7. Add a scoop of hummus and garnish with fresh parsley.
  8. Serve immediately.

Notes

  • You can substitute quinoa with brown rice or couscous.
  • Use dairy-free feta or omit cheese for a lighter option.
  • Add tzatziki or tahini sauce for extra flavor.
