A moist, warmly spiced pumpkin bread with a tender crumb and rich autumn flavor. Perfect for breakfast, snacking, or serving with coffee.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 1/2 sticks (3/4 cup) unsalted butter, softened
  • 2 cups sugar
  • 2 large eggs
  • 1 15-ounce can pure pumpkin

Instructions

  1. Preheat the oven to 325°F. Generously grease two 8 x 4-inch loaf pans and dust them with flour.
  2. In a medium bowl, combine the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk until evenly combined.
  3. In a large bowl, beat the butter and sugar until just blended. Add the eggs one at a time, beating well after each addition.
  4. Add the pumpkin and beat until combined. The mixture may look slightly grainy or curdled.
  5. Add the flour mixture and mix on low speed until just combined.
  6. Divide the batter evenly between the prepared loaf pans and smooth the tops.
  7. Bake until a cake tester or toothpick inserted into the center comes out clean, about 65 to 75 minutes.
  8. Let the loaves cool in the pans for about 10 minutes, then turn them out onto a rack to cool completely.

Notes

  • Use pure pumpkin rather than pumpkin pie filling.
  • Avoid overmixing after adding the flour to keep the bread tender.
  • Allow the bread to cool completely before slicing for the cleanest slices.
  • The loaves can be wrapped well and frozen for longer storage.
