These steakhouse burgers are juicy, flavorful, and packed with savory seasonings, tender ground beef, and a classic grilled finish. Perfect for a backyard cookout or a satisfying homemade burger night.

Ingredients

  • 2 pieces white sandwich bread, crusts removed and cut into ¼-in (6-mm) pieces
  • ⅓ cup milk
  • 2½ teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 1½ tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 3 lb (80 to 85%) lean ground beef
  • 3 scallions, white and green parts, very finely sliced (optional)
  • 8 hamburger buns

Instructions

  1. Preheat the grill to high heat.
  2. In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste.
  3. Add the kosher salt, black pepper, garlic, Worcestershire sauce, and ketchup to the bread mixture and mix well.
  4. Add the ground beef and scallions, then gently mix with your hands until everything is evenly combined.
  5. Divide the mixture into 8 equal portions and form compact balls. Flatten each into a ¾-in (2-cm) patty about 4½ in (12 cm) across. Make a slight depression in the center of each patty to prevent puffing while grilling.
  6. Oil the grill grates. Grill the burgers covered until browned on the first side, about 2–4 minutes.
  7. Flip the burgers and continue grilling until cooked to your desired doneness.
  8. Toast the hamburger buns on the cooler side of the grill if desired, then serve the burgers on the buns.
