These strawberry banana oat bars are soft, naturally sweet, and packed with wholesome ingredients. Perfect for breakfast, snacks, or meal prep, they combine creamy peanut butter with fresh strawberries and ripe bananas.

Ingredients

  • 2 cups mashed overripe bananas (about 5 large bananas)
  • 4 cups rolled oats
  • 1 cup natural peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (optional)
  • 1 cup diced strawberries, plus more for on top

Instructions

  1. Preheat the oven to 350 degrees F. Line a 7 x 11 inch baking dish with parchment paper and set aside.
  2. In a large mixing bowl, mash the ripe bananas. Add the oats, peanut butter, vanilla extract, and salt if using. Mix well, then fold in the diced strawberries, reserving a few for the top.
  3. Transfer the mixture into the prepared pan and spread evenly. Press extra strawberries into the top if desired.
  4. Bake for 20 to 25 minutes, or until the top is golden and slightly firm to the touch.
  5. Allow the bars to cool completely before removing from the pan using the parchment paper. Slice into 12 rectangular bars or 16 squares. Serve with extra peanut butter, strawberries, or banana slices if desired.

Notes

  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • Freeze individual bars for up to 2 months for easy meal prep.
  • Use almond butter instead of peanut butter if preferred.
  • Old-fashioned rolled oats work best for texture.
