Ingredients

For the Donuts:

  • 2 ½ cups all-purpose flour
  • 2 ¼ tsp (1 packet) active dry yeast
  • ¼ cup granulated sugar
  • ½ cup warm milk (110°F)
  • 2 tbsp unsalted butter, melted
  • 1 egg
  • ½ tsp salt
  • Oil for frying

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup heavy cream

For the Strawberry Filling:

  • 1 cup fresh strawberries, diced
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water (slurry)

For Coating:

  • ½ cup granulated sugar
  • 1 tsp cinnamon (optional)

Instructions

  1. Make the Dough:
    • In a small bowl, mix warm milk, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
    • In a large mixing bowl, combine flour and salt. Add melted butter, egg, and yeast mixture. Mix and knead until a smooth dough forms.
    • Cover and let it rise for 1-1.5 hours or until doubled in size.
  2. Prepare the Fillings:
    • For the cheesecake filling, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in heavy cream and refrigerate.
    • For the strawberry filling, cook strawberries, sugar, and lemon juice in a saucepan over medium heat. Add cornstarch slurry and stir until thickened. Let it cool.
  3. Fry the Donuts:
    • Roll out the dough to about ½-inch thick and cut out circles.
    • Let the donuts rest for 15-20 minutes.
    • Heat oil to 350°F (175°C) and fry donuts for 1-2 minutes per side until golden brown. Drain on paper towels.
  4. Fill & Coat:
    • Roll warm donuts in sugar (mixed with cinnamon, if using).
    • Using a piping bag, inject cheesecake and strawberry filling into each donut.
