These Strawberry Crunch Cookies are soft, chewy, and packed with sweet strawberry flavor, white chocolate chips, and a delicious crunch from vanilla wafers. Topped with a strawberry glaze, they’re perfect for any dessert lover.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup freeze-dried strawberries, crushed
  • 1/2 cup white chocolate chips
  • 1/2 cup crushed vanilla wafers
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1 tablespoon strawberry jam (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until combined.
  6. Fold in crushed freeze-dried strawberries, white chocolate chips, and vanilla wafers.
  7. Scoop dough onto the prepared baking sheet and bake for 12–14 minutes or until golden brown.
  8. Let cookies cool completely before adding the glaze.
  9. For the glaze, whisk powdered sugar, milk, and strawberry jam until smooth, then drizzle over cooled cookies.

Notes

  • For extra crunch, chill the dough for 30 minutes before baking.
  • Store cookies in an airtight container to keep them fresh longer.
