These strawberry lemon blondies are soft, chewy dessert bars bursting with fresh strawberries and zesty lemon flavor. Topped with a vibrant lemon glaze, they’re perfect for spring and summer treats.

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 teaspoons lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (75g) chopped fresh strawberries
  • 1 tablespoon all-purpose flour (for coating strawberries)
  • 3/4 cup (90g) powdered sugar (for glaze)
  • 1 tablespoon lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (177°C) and line an 8×8 inch pan with parchment paper.
  2. In a large bowl, whisk together melted butter and granulated sugar until well combined.
  3. Whisk in the egg, lemon juice, lemon zest, vanilla extract, and salt.
  4. Fold in the flour until just combined.
  5. In a small bowl, toss chopped strawberries with 1 tablespoon of flour to coat.
  6. Gently fold the strawberries into the batter.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 25–30 minutes or until the edges are lightly golden and a toothpick comes out clean from the center.
  9. Allow blondies to cool completely in the pan.
  10. To make the glaze, whisk together powdered sugar and lemon juice until smooth.
  11. Drizzle glaze over cooled blondies, then slice and serve.

  • Use fresh, not frozen, strawberries for best texture.
  • Don’t overmix the batter to keep blondies soft and chewy.
  • Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
